4 Boneless Skinless Chicken Breasts
2 (14.5 oz.) cans of Signature Select Fire Roasted Diced Tomatoes with Garlic, drained
1/2 cup O Organics Balsamic Vinegar
6 Large O Organics Basil Leaves, chopped
1 cup Lucerne Rustic Cut Shredded Mozzarella Cheese
2 T. Signature Select Extra Virgin Olive Oil
Salt & Pepper to taste
Season chicken breast with salt & pepper. In a large skillet over medium-high heat, brown chicken in olive oil & cook until golden brown on each side (approx. 4 min./side until internal temp. of 165 degrees). Remove chicken from pan & allow to rest. Add balsamic vinegar to skillet and allow to simmer for 2 min., stir frequently. Add tomatoes and reduce heat to simmer for 6-8 min., uncovered stirring occasionally. Return chicken to pan & top each breast with 1/4 cup cheese, cover & remove from heat. Allow cheese to melt over chicken, 1-2 min. and serve!
